12 ears green young corn
12 nice leaves from the ears. (The 3rd leaf of each ear is the best)
1/4 tsp. salt
1/2 stick butter
1/3 cup coconut oil
2 tblsp sugar
1 tsp. baking powder
1-3 oz evaporated or coconut milk
METHOD:
1. Cut corn from cobs and grind unti very fine. Add salt, melted butter, oil, sugar and baking powder.
2. Add milk, being sure filling does not become soupy, mix very well.
3. With Large end (head) of leaxf to the right, and small end (tail) to the left, spoon the filling in the middle of the large end.
4. Fold the top and the bottom of the leaf to the center.
5. Fold the tail to the head.
6. Set Ducunus in pot with 2" of boiling water. Set them with open ends up. Cover and boil for 20 min. Or until firm and done.
